The Gyuto chef's knife (210 mm blade) is very suitable for cutting, shredding and slicing meat, fish, roots and fruits.
The universal kitchen knife (155 mm blade) is smaller than a cook knife, but can still handle many different tasks, such as processing meat, fish and vegetables. Well suited to complement the set of other knives, which are thought of primarily for chipping.
Peeling knife (90 mm grain), suitable for all work performed by holding food between the paws, e.g. peeling, chopping, cleaning, etc. of root and fruit.
The blade of the Tojiro Western DP series knives is made of three-layer steel with a strength on the Rockwell scale of 60 (+/-1) HRC. The middle layer is made of VG-10 steel with cobalt content. The extreme layers are formed by a slightly softer chrome stainless steel (13 chrome). The core of the knife, consisting of three layers, is thus very hard and perfectly retains sharpness. However, the outer softer layers give the necessary durability and elasticity. The handle of the knife is made of composite material and firmly attached to three rivets.
