Universal kitchen knife (blade 150 mm) - can handle many different jobs for which the gyuto is too big. Suitable for processing meat, fish and vegetables. 3. Small kitchen knife (blade 78 mm) - perfect for cutting fruit and vegetables on the work surface or between your hands, as well as for e.g. peeling shrimp and other small jobs that require precision.
The high chromium content of the single-layer AUS-8 hammered steel ensures corrosion resistance and a hardness of 58 HRC on the Rockwell scale. It is recommended to sharpen knives at an angle of 15 °.
Hammered steel looks great, but this special pattern serves more than just aesthetic purposes - the dimples on the surface of the steel act as air pockets that reduce frictional resistance between the food and the blade when cutting. It is easier to cut, and even when processing denser foods, the cut is uniform and clean.
The handle of Kaiju knives is made of boxwood. Wood material impregnated with special resins is resistant to moisture, chemicals and odors and can be compared with the best properties of plastic and composite materials.
