A sharpening stone or whetstone is the best tool for manual sharpening of Japanese-style knives. The Japanese sharpening stone KING 800/6000 is double-sided.
- Grit #800 is intended for daily sharpening of the knife and removal of burrs from the blade.
- Grit #6000 is for finishing and polishing the knife blade. After polishing with a 6000-grit burr, a mirror-like result can be achieved.
The dimensions of the whetstone are 185*63*25mm. In addition to the double-sided whetstone, the set includes a sharpening tray with a plastic non-slip bottom and a plexiglass cover that allows the whetstone to be safely stored.
Place the stone in water for 5-10 minutes before use. Japanese kitchen knives generally have a sharpening angle of 15 degrees, European knives have a sharpening angle of 20 degrees. Before sharpening, read the sharpening instructions provided by the knife manufacturer.
There is no need to clean or dry the stone during sharpening. If necessary, additional water can be sprinkled on the stone. After use, clean the sharpening stone under running water and dry.
