Deba is a knife with a thicker blade than usual and very durable, designed for heavy work. Deba is used in Japan primarily for processing raw fish: gutting, removing scales, removing fish heads and piercing bones and smaller bones. If necessary, you can also cut chicken bones.
This knife is slightly smaller and lighter than a regular deba and is therefore particularly suitable for operations that require precision.
Narihira-Saku is a genuine and simple Japanese knife. The hardness of the blade is 56 HRC and the handles of the knives are made of magnolia wood.
